Recipe: BBQ Tempeh Sandwiches

BBQ Tempeh Sandwich Finished Product

This recipe is quick and easy to make. It’s also very nice to store and eat later. If you try it, please leave your comments about your experience or what you’d do differently.

Ingredients

1 cup barbecue sauce, your choice or read below

1 (8 ounce) package of tempeh, crumbled

1 tablespoon vegetable oil

1 red bell pepper

1 yellow bell pepper

1 clove of garlic, diced

4 Kaiser rolls, split (or hamburger buns)

21 seasoning salute and salt & pepper to taste

Directions

  1. Pour the barbecue sauce into a medium bowl. Crumble tempeh into the sauce, stir and let it marinate for about 10 minutes. Add diced garlic to mixture. (I usually do this first so it can marinate while I’m cutting up the bell peppers. I usually use Bullseye BBQ sauce because it doesn’t contain high-fructose corn syrup and use a dark, smoky sauce for a more well balance flavor. I also choose to use yellow instead of a green bell pepper for a sweeter flavor instead of bitter.)
  2. Heat oil in a skillet over medium heat. Add the red and yellow peppers. Cook, stirring frequently until tender. Stir in the tempeh and barbecue sauce and heat through. Season to your liking.
  3. Spoon tempeh mixture onto Kaiser rolls and serve.

Yield: 4-6 sandwiches
